Ingredients:

  • 7 eggs
  • 7 tbsp sugar
  • 7 tbsp flour
  • A pinch of salt
  • Vanilla
  • 18 g baking powder

Instructions:

  1. Whip the egg whites with a pinch of salt until stiff peaks form. Gradually add the egg yolks, sugar, vanilla, baking powder, and finally the flour.
  2. Take a small amount of the batter into separate bowls: add 1 tsp cocoa to one for a lighter color and 2 tbsp cocoa to another for a darker color. The method is described in the video.
  3. Bake at 180 degrees for 30-35 minutes. Once baked, turn it out while still hot.

For the Cream:

  • 500 g milk
  • 100 g flour
  • 100 g sugar
  • 3 pieces vanilla
  • 200 g butter
  • Lemon zest and cognac to taste
  1. Boil the milk, then add the well-mixed flour and sugar, whisking quickly. The mixture will thicken immediately; let it cook for 10 minutes.
  2. Whip the butter until white, then gradually add the cooled milk mixture, vanilla, cognac, and lemon zest.

Assembly:6. Cut the cake into three layers. Line the round cake pan with transparent tape around the edges.7. Soak all three layers with strawberry syrup and top with strawberries. Spread cream on all three layers, then refrigerate for 1 hour to firm up.8. After cooling, frost the outside of the cake with cream and wrap it. Let it rest in the fridge for 5 hours, preferably overnight.
